The Anatomy of Our Fish

The majority of our products are made from one of four key cuts that we skilfully fillet from each individual fish. Each fillet is then carefully graded by size and weight so we can ensure consistency to our customers time after time. So let’s have a look at those key cuts in a bit more detail and see what we create from them.

PREMIUM LOIN FILLETS

Perhaps the prime cut of a fish. We take our loin fillets from premium species like Cod or Pollock. They are perfect for centre plate dishes and can be cooked in a variety of ways providing large juicy flakes of succulent white fish.

ANGLE CUT TAIL FILLETS

Our signature tail fillets of Cod or Pollock taken from larger fish give great plate coverage and are juicy and delicious. Perfect for premium batter coating or ‘rolling’ with a filing this is a versatile cut that offers any chef a wide range of options.

CLASSIC WHOLE FILLETS

Our classic whole fillets are taken from only the best sustainably sourced fish we can find. Available with or without skin and in a range of weights and sizes depending on our clients requirements.
